WEST INDIAN BEAN FRITTERS

serves 4
16 oz can cooked small beans
1 small yellow onion, finely chopped
1 clove garlic, minced
1 tablespoon habanero hot sauce or curry powder
freshly ground black pepper to taste
Vegetable oil, for frying
sour cream, for garnish
Hot sauce, for garnish
Lime slice, for garnish

      Combine the beans, onion, hot sauce, and black pepper in a large bowl,
and stir to mix well. Pour vegetable oil 1/2 inch deep into frying pan and heat
until hot but not smoking (About 325deg.F) drop heaping teaspoons of the
fritter mixture into the hot oil, about 6 at a time. Fry on both sides until
golden, 4-5 minutes per side. (If fritters turn dark immediately, the oil it
too hot.) Remove fritters with a slotted spoon. Drain on paper towels. Serve
hot with a small bowl of sour cream, Hot sauce and a plate of lime slices.
